Recipe of the Month: Brown Rice & Asparagus Salad with Orange Basil Vinaigrette
Spring has so many healthy veggies to offer and asparagus could be the most powerful of all! This member of the lily family is high in fiber, vitamins C & K and packed with antioxidants which help fight disease. Do something good for yourself this season and try asparagus in this light and fresh salad with the perfect hint of citrus!

Salad:
3 cups of cooked brown rice
12 asparagus spears blanched and cut int 1 inch pieces
1/2 cup of cherry tomatoes cut in half
1 segmented orange

Orange Basil Vinaigrette:
1/2 cup canola oil
3/4 cup orange juice
1 tablespoon orange zest
2 teaspoons agave nectar
2 cloves minced garlic
1/4 cup basil chiffonade
salt & pepper

Combine cooled brown rice, asparagus, cherry tomatoes and orange segments in a bowl.
In another bowl whisk together oil, juice, zest, agave nectar and garlic. Stir in basil and add salt and pepper to taste. Pour over brown rice mixture and lightly toss. Serve cold. Enjoy!
